Dark Chocolate Sauce made from real chocolate - easy to make and very versatile. Store bought chocolate sauce is just an imitation and has loads of sugar. This sauce has a true, rich chocolate flavor made from at least 60% cocoa.
150gramsdark chocolate (at least 50% cocoa)*You can also do half dark chocolate and half milk chocolate.
150mlmilkfull fat
63mlheavy cream
20gramswhite granulated sugar
20gramslight corn syrup
8gramscocoa powder
15gramsunsalted butter
Instructions
Place the dark chocolate in a medium mixing bowl. Set aside. In a saucepan, simmer milk, cream, sugar, and corn syrup together. Gently mix with a whisk. When it starts to simmer, add the cocoa powder, mix, then bring it to a boil.
Remove the pan from heat and pour the mixture into the bowl of dark chocolate. Using a spatula, mix together until the chocolate has melted.
Add the butter into the mixture and mix until it’s melted. The consistency should be smooth and slightly thick. It will continue to thicken as it cools down.
Notes
If left to cool, the chocolate will set (but not harden). You can choose to rewarm the chocolate sauce in the microwave in increments of 30 seconds and in low setting. Alternatively, you can put the sauce in a heatproof bowl set over a saucepan of simmering water (the water should not touch the bottom of the bowl). Heat the sauce for about 3-5 minutes while stirring regularly.
