Instructions
Start by combining the sugar and water in a small saucepan. If you’re using granulated sugar, you can also try using cane sugar or a mix of white and brown sugar for a slightly different taste.
1 cup water
1 cup granulated white sugar
Heat the mixture over medium heat, stirring frequently, until the sugar dissolves completely and forms a simple syrup.
Add the vanilla bean paste. As an alternative, use pure vanilla extract or vanilla bean. If using a vanilla bean, split it in half lengthwise and add it to the saucepan.
1 tablespoon vanilla bean paste
Allow the syrup to simmer for about 10-15 minutes, or until it becomes thick and syrupy. If you prefer a stronger vanilla flavor, you can always add more tablespoons or teaspoons of vanilla to the mix.
Remove the saucepan from the heat and set aside to cool.
Once cooled, transfer the syrup into a glass jar or an airtight bottle. If you used cinnamon sticks, mint, or other flavor enhancers, be sure to remove them before storing the syrup.
