When it comes to cooking a perfect pork chop, simplicity often brings out the best flavors. Sometimes, all you need is a magical marinade made from everyday pantry staples to transform a humble cut of pork into a juicy, flavorful masterpiece. This everyday pork chop marinade is savory with just a hint of sweetness, and it’s bound to become a staple in your kitchen.

I personally prefer thinner chops (about 1/2-inch thick) with some fat on the edges to make the pork chop really juicy! This recipe also works well with pork belly, pork steaks, or sliced pork shoulder.

Why This Marinade Works Wonders

What makes this pork chop marinade so special is its perfect balance of flavors. With a few pantry essentials, you can create a marinade that infuses the pork with a deep, savory flavor, complemented by a slight sweetness and a touch of tang. The combination of soy sauce, garlic, sugar, Worcestershire sauce, mustard, and pepper is what brings out the best in the meat.

  • Soy Sauce: The foundation of our marinade, it adds a rich umami flavor that penetrates deep into the meat.
  • Garlic: Adds a fragrant and pungent note, enhancing the savory elements of the pork.
  • Sugar: Just a touch, to balance the saltiness of the soy sauce and provide a hint of caramelization when seared.
  • Worcestershire Sauce: Brings complexity with its tangy, savory taste, and deepens the overall flavor profile.
  • Mustard: Adds a little kick and depth, enhancing the marinade’s savory qualities.
  • Pepper: Freshly ground black pepper brings a subtle heat, rounding out the flavors.

Tips For Perfect Skillet Pork Chop

  1. Choose the Right Cut: For a juicier pork chop, opt for bone-in chops. They tend to have more flavor and stay moist during cooking. My family prefers thin pork chops (about 1/2-inch thick). We usually use the “fast fry” porkchops found in our local grocery or, if in Asian supermarkets, we ask the butcher to cut it to our liking
  2. Don’t Overcrowd the Pan: When cooking on a skillet, give your pork chops some space. Overcrowding can lead to steaming rather than searing.
  3. Rest Before Serving: Allowing the meat to rest after cooking is crucial. It helps lock in the juices, making your pork chops tender and flavorful.

Pairing Suggestions

The marinade’s flavors work well with a variety of sides, making it a versatile dish for any meal of the week. We love pairing this with Mediterranean Butter Rice, Roasted Vegetables, or some Potato Gratin. These are also good with a light side salad and creamy mashed potatoes.

Ingredients

  • 4 pieces bone-in pork chops about 1/2 inch or 1.25 cm thick ((see Note 1))
  • 1-2 tablespoons cooking oil

For the Pork Chop Marinade:

  • cup regular or all-purpose soy sauce (80 ml)
  • 2 teaspoons worcestershire sauce
  • 1 teaspoon dijon mustard
  • 2 tablespoons brown sugar
  • 3 cloves garlic minced
  • ¼ teaspoon ground black pepper

Instructions

  • Prepare the Marinade: In a medium bowl, whisk together the soy sauce, minced garlic, sugar, Worcestershire sauce, Dijon mustard, and black pepper until well combined.
1/3 cup regular or all-purpose soy sauce
    2 teaspoons worcestershire sauce
    1 teaspoon dijon mustard
    2 tablespoons brown sugar
    3 cloves garlic
    1/4 teaspoon ground black pepper
  • Marinate the Pork Chops: Place your pork chops in a resealable plastic bag or a shallow dish. Pour the marinade over the chops, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, but for the best flavor, let them marinate for 2 to 4 hours.
    4 pieces bone-in pork chops
  • Cook the Pork Chops: When ready to cook, remove the pork chops from the marinade and let any excess drip off. Heat a skillet over medium-high heat or preheat your grill. Cook the pork chops for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C).
    1-2 tablespoons cooking oil
  • Rest and Serve: Let the pork chops rest for 3-5 minutes before serving. This step allows the juices to redistribute, ensuring every bite is tender and juicy.
